Taco Lasagna

Tired of the same ol Taco night? Can’t decided between Italian and Mexican food? Well this is the perfect dish for you. Layers of beef, beans, olives and ooey gooey cheese between flour tortillas! How can that be wrong??

2 lbs ground beef
1 red onion diced
2 envelopes taco seasoning + water on package directions
1 cup green olives, drained
1 ( 28oz) can refried beans
1 cup salsa
1/4 cup water
2 cups colby jack cheese, divided
1 cup sharp cheddar
18 flour tortillas
2 roma tomatoes sliced thin

Brown ground beef in skillet with onions, Drain. Add seasoning packets and required water. Stir well. Add green olives and simmer over low heat about 7 minutes.

In saucepan combine refried beans, 1 cup salsa. 1/4 cup water and 1 cup colby jack. stir to mix wel and heat over medium low until cheese is melted.

Spray 9×13 casserole dish with nonstick cooking spray. Lay 6 tortillas down, spread bean mixture over top, a layer of meat mixture, another 6 tortillas, beans, the rest of the meat, 6 more tortillas the rest of the beans. Sprinkle with rest of the cheeses top with tomatoes and place in 350 oven for 20 minutes or until hot and bubbly
