Meatloaf

3 pounds ground beef

1/2 green bell pepper, finely diced

1/2 red bell pepper, finely diced

1 onion, finely diced

1 egg, slightly beaten

10 crackers crushed well

1 (15 oz) can diced tomatoes with onions celery and green peppers

2 (8oz) can tomato sauce

salt and pepper

Place all the ingredients, except the tomato sauce, in a large bowl. Mix well by hand. place on a foil lined baking sheet. Form into a loaf. Place baking sheet in 350 degree oven. Cook for 30 minutes. Remove from oven and top with tomato sauce. Return to oven and cook another 15-20 minutes or until done.

Orange dip

I grew up in a small town that didn’t have a lot of  Restaurant options or much else for that matter! But a town about  35 miles from us had a great Mexican food restaurant that served this addicting orange dip. The restaurant is still as good now and is was then and the dip just as addicting.  I don’t live close anymore and I get cravings for that awesome orange dip ALOT!  This recipe is pretty spot  on and and simple to whip up!

1 Quart of Real Mayo

2 Tablespoons plus 1 teaspoon White Vinegar

1/4 cup Paprika

2 Tablespoons Garlic Powder

Juice of 1 lime or lemon

Ok , now I need you to brace yourselves because the next steps are hard!

Place all ingredients in a bowl. Mix well with a wooden spoon. Cover .  Here is the really hard part… Refrigerate for an hour or two. ( that’s always the hardest part for me.. The waiting)

serve with chips and enjoy
